I think it is fitting of Mary as perhaps she is the best representative of the church that Jesus gave all for, both the church prior to Christ and after.
Chapter 11 describes the person appearing in Chapter 12. "And the temple of God was opened in heaven: and the ark of his testament was seen in his temple, and there were lightnings, and voices, and an earthquake, and great hail [Apocalypse 11:19]. She, the Blessed Virgin, was with child, in pain and travailing in birth. Books don't give birth. She delivered a Son a man, Jesus Christ. churches do not give birth to men. This man is the King of all nations who was (pas-tense) taken up to God and seated on His Throne. Books don't sit on thrones.
She is the prime example of the Bride of Christ... Christ is Israel though, the head of us. But as a depiction of what He gave His life for? She fits best as the Bride.

I see it as Mary as representative of the Bride of Christ. (I'm reformed, though I don't know what they teach on this point, it just seems obvious).
Since there is only One True Church she wouldn't be expected to give birth to other "One True Churches" as there is only ONE.

Let is the Ark of the Testament of God as He was within her until He reveals Himself.

Hmm....I wouldn't say she IS the Bride of Christ, but part of the Bride of Christ as a member of the Church. The Bride of Christ is THE CHURCH universal.

If you say she's a perfect example of what the Bride of Christ would follow, then yes, I would agree.

I agree, just some of the wording puts me off.
