I wasn't able to buy my Claxton Fruitcake! You can complain all you want. You've probably never tried it. Not all fruitcakes are equal! Claxton's is the best store bought fruitcake. But my southern Virginia friend gave me a refrigerated homemade one that was delicious also!

ingredients​

1 box (1 pound) graham crackers (save box)
1 jar (16 ounce size) maraschino cherries and juice
1 box (15 ounce size) raisins
1 pound chopped nuts
1 pound marshmallows
1/2 pound melted butter
1 teaspoon ground nutmeg

directions​

Crumb crackers in processor. Halve cherries. Blend in very large bowl crumbs, raisins, nuts, cherries (and juice), and nutmeg. Set aside.

In a large saucepan over low heat, melt marshmallows and butter. Add to crumb mixture and blend well with hands. Wash hands. Line cracker box with foil.

Pack mixture into box and chill several hours until firm. To vary: use green and red cherries and/or a small amount of candied fruit.

Icebox Fruitcake

Recipe Ingredients​

  • Graham crackers
  • Pecans
  • Maraschino cherries
  • Shredded coconut
  • Raisins
  • Miniature marshmallows
  • Sweetened condensed milk

Crush the entire box of graham crackers.

Coarsely chop pecans.
Chop cherries (saving the cherry juice).
Combine everything in a large mixing bowl.

Mix well.
Line a 9×13 baking dish with parchment paper or grease it with butter/cooking spray.
Press the cake batter flat into the prepared pan.
Chill for at least 6 hours and then turn out before cutting into bars.

  • 1 10-oz jar maraschino cherries
  • 1 tablespoon cherry juice
  • 1 cup raisins
  • 1 cup shredded coconut, firmly packed
  • 1.5 cups mini marshmallows
  • 1 14-oz can sweetened condensed milk

Instructions​

  • Finely crush graham crackers and coarsely chop pecans and drained cherries.
    1 14.4-oz box graham crackers,1 cup pecans,1 10-oz jar maraschino cherries
  • Combine all ingredients in a large mixing bowl and mix well.
    1 14.4-oz box graham crackers,1 cup pecans,1 10-oz jar maraschino cherries,1 tablespoon cherry juice,1 cup raisins,1 cup shredded coconut, firmly packed,1.5 cups mini marshmallows,1 14-oz can sweetened condensed milk
  • Turn out into a lightly buttered 9x13 baking dish and press flat into the pan with your hands.
  • Chill for at least 6 hours before cutting the fruitcake into bars.
