Why plural?

Nisan 15 Friday was a day of rest according to Ex 12:15, a paschal Sabbath day. Nisan 16 Saturday was a weekly Sabbath day.

Berean Standard Bible decided not to show this bit of confusion:

After the Sabbath, at dawn on the first day of the week, Mary Magdalene and the other Mary went to see the tomb.
Mark wanted to keep it simple as well in 1:

When the Sabbath was over, Mary Magdalene, Mary the mother of James, and Salome bought spices so that they might go to anoint Jesus’ body.

I assume you already know the answer, in addition to the weekly Sabbath there was also the Passover also called a Sabbath, so two Sabbaths. But there are a number of feasts and days involved with the Passover. For Jesus to spend three nights and three days in the tomb he would need to be dead and buried at sundown on Wednesday and rise at sunset on Saturday. This was given as proof to them who pierced him that he was who he said he was. Their house was left to them desolate and they will not see him again until they say, blessed is he who comes in the name of the Lord.
