why is she called the Mother of Palestine? why not from Israel or the Holy Land?

Palestine was the Christian name for the lands of Israel under the Byzantine Empire and it stuck in many traditional Christian circles that gravitated toward a replacement view of the church.

But this Marian title is actually quite recent - only last century:
