Ribs regrow. I can't think of another non-essential part that would have given her the same worth. You can imagine the teasing girls would get were Eve made from toe-nail clippings, or something worse!

I think the main point in using Adam's rib was that it is the only bone that can be removed without serious physical consequences. So Adam was weakened somewhat by the creation of the woman, i.e. he had to give up something of himself, but received (potentially) a greater benefit. There is more to the story but it is forbidden to discuss here.

She will feed you fantastic meals, cater to your every desire, always obey you, care for you in every way and as a bonus she and you will make wild passionate love as often as you want.” Adam said “Sounds wonderful but I know that everything has a price. What will it cost me?” God said “It will cost you an arm and a leg.” Adam said “That's too expensive. Errr … ahhhh …. ummm … what can I get for a rib?”
