So, whos on your list?
Mine are:

Train-okay, yes, their hits are overrated, or overplayed I should say, but they have even much awesomer stuff, just check out thier debut album, Train. Its wonderful.My second favorite band.

Ben Harper-A very talented artist who is able to blend all different styles of music into just one album. My third favorite artist/band of all time.

Eva Cassidy- she died in the 90's at a young age. She has the voice of an angel. Mostly jazz/old standard stuff.

Most underground metal is under-rated.

The vast wealth of talent and musicianship in the metal scene today goes totally unnoticed by mainstream.

Some great bands: Abyssos, Agathodaimon, Devin Townsend, Edgy, Dark Moor, In Flames, Soilwork, Andromeda, Kamelot, etc.

Project 86... Christian band... I never hear anyone talk about them at all, even christians.

hmmm POD is underrated, in my point of view. They get dissed on just b/c they are christian.
