Yes, we all have a special Guardian Angel who was given to us at our Holy Baptism. That is why it is very important not to delay the baptism. The party is not important, but the Holy Mystery of Baptism is essential to the life of the soul.

I was told that at our Holy Baptism, at first there are eight angels who watch over us for the first week, but one by one, they depart.

Day 1 - 8 angels are there to guard us.
Day 2 - 7 angels
Day 3 - 6 angels
Day 4 - 5 angels
Day 5 - 4 angels
Day 6 - 3 angels
Day 7 - 2 angels
Day 8 - our special Guardian Angels alone remains to aid us through life and death.

Has anyone been told this?

I was told our guardian angel is assigned to us at baptism and that our guardian angel has similarities to us. That prior to baptism there is no specific angel watching over us though the host of angels may be watching over us. I was also told our guardian angel could distance themselves from us if we live a sinful life and do not repent. I would think that last part would be more of us distancing ourselves through unrepentent sins, though and not the other way around.

Yes.

If you get an Orthodox Prayerbook you will find the following prayers to your guardian angel included:

O angel of God, my holy guardian, given to me from heaven, enlighten me this day, and save me from all evil. Instruct me in doing good deeds, and set me on the path of salvation. Amen.

O angel of Christ, holy guardian and protector of my soul and body, forgive me everything wherein I have offended you every day of my life, and protect me from all influence and temptation of the Evil One. May I never again anger God by my sins. Pray for me to the Lord, that He may make me worthy of the grace of the All-Holy Trinity, and of the blessed Mother of God, and of all the saints. Amen.

While the general opinion is that men recieve Guardian Angels at the time of their Baptism, there were multple Fathers (whose names conviently escape me at the moment) that each man is assigned an Angel at time of his birth or even his conception. The notion that we recieve a Guardian Angel at Baptism probably came about from baptismal prayers, but if we'd stay true to this analogy, we'd recieve one at every service we attend. :)
