In my research into replicating the famous 11 Herbs & Spices of KFC's Fried Chicken, I have discovered that it is relatively easy to make "great" tasting chicken, but VERY HARD to take a recipe that final 5% to make AWESOME fried chicken like Mr. Harland Sanders did! But then, I guess it took him ten years to do it so.... So, I've got about about 8.5 years to go then!

Regarding the following recipe, I would be wrapped if someone out there gave this recipe a go, and then gave me some feedback

ORIGINAL RECIPE KENTUCKY FRIED CHICKEN:
1 kg Chicken (Fillets, legs, breasts, etc)
Marinate (2 to 24 hours):
1 Tbsp Salt
1/8 tsp Garlic Powder
1/8 tsp Onion Powder
----------
Herbs/Spices (11 Count em!)
½ Tbsp Black Pepper
½ tsp Cayenne
½ tsp Caraway Seeds (Ground)
¼ tsp Thyme
¼ tsp Celery Salt
¼ tsp Cinnamon
¼ tsp Mint (Dried)
¼ tsp Sage
¼ tsp Rosemary
¼ tsp Lemongrass
¼ tsp Mustard (Powder)
Additional Elements:
1 Tbsp Salt (Mandatory!)
1 Tbsp MSG, or Accent (Optional, but definately used by the Colonel. Note: Use less salt if you do though!)
½ tsp Tomato Powder (For those who don't want to use MSG but who want bite & that extra "kick"...
1 tsp Sugar (Optional)
Flour Mix:
1 Cup Unbleached All-Purpose Flour
1 Cup Cake Flour (Swans Down)
¾ Cup Whole Wheat Flour (King Arthur)
Egg Wash:
1 Cup of Milk
2 eggs

Finally:
Don't forget to double dip the chicken (i.e. Dip damp/wet chicken into flour mixture, then into milk/egg wash, then back into flour one last time!)
