Easy Cherry Cobbler

I don't eat desserts anymore, but this was one of my favorites!

1 can (1 pound) pitted red sour cherries ( I used to buy Comstock brand)
3/4 cup + 2 T. sugar
2 T. all-purpose flour
Dash of salt
1 T. lemon juice
1 T. butter
1 cup Bisquick
1/4 cup milk

Drain cherries and reserve juice. Combine 3/4 sugar with flour and salt. Gradually stir in cherry juice. Cook over low heat until thickened, stirring constantly. Cool slightly. Stir in lemon juice, butter and cherries; pour into 1 quart casserole. Combine Bisqick and 2 T.sugar; add milk and beat well. Spoon batter over cherries. Bake in preheated hot oven (400 degrees F.) for 20-25 minutes. Makes 4 servings.

Those were the days! Try a scoop of vanilla ice cream on top.:angel:

Bisquick is a mix that comes in a box. An American recipe for baking powder biscuits would work. If "biscuits" means cookies where you live, that's not it! Our biscuits are kind of like scones, I guess.

I had a sugar addiction and would probably have eaten all your dessert in one day. I would have my first serving with the intention of saving some some for another day, but before the clock had struck midnight, I'd tell myself, "What the heck!"

Thanks. What you call biscuits I would call scones. Although I'm familiar with the word "cookies" it isn't a word we tend to use. Biscuits to me are what you would call "cookies".

I only know this stuff because I get recipes off the Internet and some are from the US. It's a real nuisance because I need to convert your strange weights and measures into metric and occasionally translate the odd word for foodstuffs which are different in Auspeak.

Even something as simple as 'sandwich' means something a little different here.

I understand about the annoying weights and measures because I like British recipes. LOL. Steamed puddings were a surprise because they're like cake and we expect our puddings to be softer like porridge. But I'm old and don't cook or bake any more. I still like talking about recipes. I've had scones; I don't think they are as soft as our biscuits.

I love steamed puddings but never make them since I don't have a steamer.

If I didn't cook, I'd have nothing to eat. I don't do many baked desserts. The last dessert I made was last week - a lemon meringue pie.

For main meals I tend to eat baked or fried lamb/chicken/pork/beef/fish/shellfish/prawns plus a lot of salads. None of these involves much cooking effort.

I live in a warm climate, so meals tend to be light.
