How do we know that the seven days story, and most importantly Garden of Eden holds any more truth than all of the other ancient theories about forming the world?
Who wrote Genisis and where did he get his information?
Could Genisis be symbolic for things beyond our understanding?

Because the Bible is infallible unlike all the other ancient theorys of the beginning of the world. Genesis does say specifically, "God Created the Heavens and the Earth", it's not like it can be interperated differently. Plus, there is evidence for a young earth in science. Moses wrote Genesis, but like the entire Bible, Genesis is God inspired, and thus it should be treated as God's word.
