Check St. Basil the Great (http://www.ccel.org/fathers2/NPNF2-08/TOC.htm). His first nine homilies are about the book of Genesis.

There is a book First Created Man by St. Symeon the New Theologian that contains homilies about creation, the fall, and our salvation. Although it's not specifically about Genesis, it does help.

I own a copy of this and I can tell you it is excellent. It was printed by St.Herman Press (Platina) and has an article by Fr. Seraphim in there as well if I recall.
