I made some pesto from scratch for the first time tonight. Yum-mmyy!! Except...we would have been fine with just one clove of garlic in it instead of the two that I put. My wife's making us some baking soda-water right now.

I can't believe I ate the who-o-o-le thing.

Take a loaf of ciabatta bread and slice it lengthways (so there is a top and a bottom- if you don't have ciabatta, a baguette will do).

on the bottom spread a good layer of pesto. Top with deli turkey breast (I bet leftover thanksgiving turkey would work well too), provolone cheese and roasted red bell peppers (you can find these in jars if you don't want to roast your own). Wrap sandwich in foil and bake at 350 degrees for 20-30 min or until hot. Slice into individual sandwiches.

This sandwich freezes well; just thaw and heat in oven. Great for parties.

My husband gave me a panini grill last Christmas (because he wanted one) and we make this sandwich all the time, except I add a few onion slices and fresh basil leaves also. Add a little spicy mustard - yum.

There's no such thing as too much garlic:thumbsup:;)

Seriously, if the raw garlic in pesto is too strong for you - roast it in the oven first.

Take your whole head of garlic, strip off the outer paper and cut a little bit of the top off (just enough so that you can see the top of the individual cloves), drizzle with a little bit of olive oil, sprinkle with salt and pepper, wrap in foil and bake at ~350 for 45-60 minutes. The garlic will be soft (just squeeze how ever much you need right out of the paper), it stores well in the fridge and you can use it as a substitute for raw garlic - only it has a slightly sweet flavor due to the roasting.

Sounds rather like the time my dad wanted to give my mother a gas grill for mother's day. . .or the waffle makers at Christmas. . .:D
