What is the deal with the hat that some Jewish men wear? I don't know what the name of it is, so forgive me if that sounds offensive...but it is a small hat that men wear on the spot in the back that usually goes bald. What is it symbolism? When did men begin to wear it? How often is it worn?

It is a yarmulkah or kippa. I always knew it as a yarmulkah - pronounced as yah muh kuh.
Here is a link to it.

It is a sign that they are submitting to the Most High.

I found this most interesting myself, as it talks about the history of it and other religions reasons for headcoverings of sorts.
