What does glatt mean?
It's an extra stringency some Jews follow...glatt means the lungs are smooth
(glatt means "smooth" in Yiddish) ie, free from adhesions.
Some people use the term "glatt" informally to mean a higher standard
of kashruth (like mehadrin).

The animal meaning a full grown, cow, sheep, goat, etc, not a chicken or fish. Also it depends on if you are Ashkenazim, or Sephardim, as to which standards are used.
