Why should we not believe it when anyone, ex-catholic or other, says they have been saved?

Why can't we be a little more positive?

"When his disciples heard it, they were exceedingly amazed, saying, Who then can be saved?

You haven't clarified as some have asked - are you saying that NO ex-Catholic can be a fundamentalist?

No, but that is hardly your concern unless it is you. We recognize whether people are God's or not by their fruits, which may or may not include their confession of faith.
