Baptists are an extremely large category. The theological positions of Baptists vary about as much as they do among Christians in general. Baptists hold only one doctrine in common: we all believe that baptism ought to only be administered to people who have already professed the Lordship of Jesus. That said, most Baptists tend to be theologically orthodox.
Southern Baptists are a specific denomination. Each Southern Baptist church is autonomous, but they all belong to an umbrella organization: the Southern Baptist Convention. The SBC has several doctrinal distinctives, including the infallibility of Scripture, a memorial view of the eucharist, and an emphasis on evangelism.
Anabaptists are, more or less, an entirely different tradition (though they also believe in believer's baptism). The Anabaptist board would be a good place to learn about them. But to be succinct: when you think of Anabaptists, think of Mennonites, and you're not too far off.
