Me, me! If the rain clears up, I was going to take the little girls on a free hayride to the pumpkin patch and apple orchard today. We were going to go with some friends. I had hoped to make an apple crisp when I got home. . .Please let the rain stop!

Please pray for my ex-daughter-in-law. She has a medical condition where her blood clots on her and has to take a blood thinner in order to survive. The medicine she takes costs $6000/month. She was on medicaide, but yesterday she found out for some reason, the medicaide will not pay for it. She cannot afford it. She is going to get a friend of hers that works for medicaide to look into it and get it all sorted out. Please pray that God sovereingly overrides the bureaugatic (sp) nonsense of the medicaide dept. (My stepson divorced her, that is why she is ex-daughter in law. But I think of her as the daughter I never had. Plus she is the mother of 2 of my grandkids. She will always be family).

Just got an email from my daughter. They reinstated her medicaid so she can get her medicine. Wow. That was fast. The US government tends to move slower than a 7 year itch.

Wow!!!
This month's Food & Wine magazine has a recipe for Tuscan Salmon...and is it great!! We had it for dinner tonight.
The salmon (we used steelhead) is seasoned with honey, salt, pepper, ground mustard, and dried thyme. I was suprised how sweet that combo seemed to be. The salmon is then baked over fresh spinach leaves that have been tossed with olive oil and minced garlic.
It's served with a grape sauce made with red seedless grapes, red wine (we used a 2004 Mondavi Private Selection Merlot), and the leftover seasonings from the salmon, and it's cooked in the same skillet the salmon was browned in before going in the oven.
Absolutely delicious!!!

That's right. (I guess I got that kinda turned around in the first post, huh?) The recipe says a 13x9x2 pan. We used our Pyrex lasagna dish.
Also...the salt, pepper, mustard, and thyme get mixed together. Then rub some honey on the salmon and sprinkle some of the seasonings over that. I guess the honey is not only for flavor, but helps the seasonings stay where they belong...on the fish.
After browning, it only takes about 10 miutes in a 350 oven to finish.
While the fish is in the oven, the sauce is made out of 2 cups of halved red seedless grapes, 1/2 cup of red wine, and the seasonings left over from sprinkling on the fish. Saute the grapes, then add the wine and seasonings. Bring this to a boil and reduce the liquid by half.

One of the perks about living on the facility where I work is that I get to go home for breaks and lunch. The other day we were cleaning ponds, and it was kinda foggy out...not really raining yet but a heavy mist getting everything wet nonetheless. About a half hour before breaktime I started thinking about something to eat...pork & beans!! That would hit the spot!! Then I remembered we had some applewood smoked bacon that would be pretty doggone good in the beans, with some barbeque sauce!
I got home and when I was getting the bacon out, I realized you can't really have beans without onion, so I diced some of that up, too. As I was frying the bacon and onions, I got to thinking about the barbeque sauce...and realized that molasses would probably be better!!
So what began as a simple taste for pork & beans, forty minutes later had turned into pork & beans with bacon and onion in molasses...the best pot of beans possible in about ten minutes!!

Just for curiosities sake - what are my US brothers and sisters fixing for Thanksgiving.
So far I'm preparing
1. turkey with stuffing (of course)
2. cranberries (a no brainer)
3. garlic mashed potatoes & gravy
4. green beens sauteed with shallots & tomatoes in olive oil, tossed with basil pesto (mmmm mmmm - thanks to Giada deLaurentis of FoodTV for this recipe)
5. brocolli/cauliflower marinated salad
6. roasted zuccini w mushrooms
7.. chocolate cheesecake
I'll have a couple of nice bottles of wine - a nice Gewurztraminer for my white, maybe a Pinot Noir or Grenache for my red.
We're sharing the holiday this year with another family from my church (our daughters are very close). Our friends will bring a salad and dessert to share.
Also, my son, his wife and my grandsons will be there.
I love Thanksgiving - it is truly my favorite holiday. There's time to relax and enjoy family and friends - no uproar of the commercialism associated with Christmas, Easter, or even Valentine's Day.

A new restaurant just opened up here in town, it's a strange combination - German and Chinese.
We went there after church yesterday to check it out, and surprisingly, it was pretty darned good! :thumbsup:
Only one complaint, really....typical of chinese, after a half-hour we were all hungry...

Yesterday, I made pizzelles with my poppop and today I made a batch of chocolate chip cookies and helped (at the end) to ball/sugarize lemon snowdrop cookies. :yum: I LOVE cookies!

It's not really the whether for it, but after over 6 months of summer we are really ready for cooler weather food. Shame we can't have some cooler weather to go with it.

Yoplait yogurt is the BEST--specially the raspberry.
Nothing against plain raspberry yogurt (after all, raspberries are my favorite fruit) but the yoplait whips (chocolate, chocolate cherry, chocolate raspberry, dulce de leche) are the best.

had an exam for historical geography this morning... cained it. i think i went to a total of about 8 out of 24 lectures, attended one practical all semester (i had a timetable clash), and studied for 3 hours last night and early this morning. got in there, it was a three-essay exam, and three of the questions happened to be on the lectures i had attended and actually took some notes on, or had some knowledge of from first year! :clap:

Have you guys ever heard of a 'turducken (http://www.foodnetwork.com/food/recipes/recipe/0,1977,FOOD_9936_85721,00.html)'? I saw it on Saturday on The Food Network's show 'Diners, Drive-Ins, and Dives' (http://www.foodnetwork.com/food/show_dv).
The recipe is from a place called The Alpine Steakhouse in Sarasota, Florida. Anyway...they de-bone a turkey, a duck, and a chicken. They stuff the chicken inside the duck, and then stuff all of that in the turkey along with a layer of stuffing, and then bake at 200 degrees for about 13 hours. It's supposed to be a popular item at The Alpine Steakhouse.
Sounds good to me!!! Looked great on TV, too.

My daughter and I were shopping at Costco the other day - she pointed out to me that they had all their "smoking cessation" and "weight loss" products right inside the entrance - so that they could catch everyone's eye for the new year.
Don't have pictures (rather unusual, generally lots of food pictures) but cooked a darn good meal for my family Christmas get-together this year (which was actually on Saturday, December 29).
We had:
Cold boiled shrimp
Antipasti platter
Bruschetta
Sauteed green beans
Eggplant parmesan
Tossed salad

I'm finally getting the hang of biscuit baking!! A few years ago I tried baking some, but they always turned out to be more like white hockey pucks.
I tried again over the Christmas holidays. I think I was doing two things wrong:
1. I wasn't cutting the shortening into the flour well enough. I worked on cutting the shortning in longer this time.
2. After I added the liquid, I think I was working the dough far too much. The recipe says 'knead ten times', but I think I worked it far more than that.
I did these two things different this time, used lard for the shortening, and buttermilk for the liquid...and they turned out great!!! And not just once!!

biscuits can definitely be tricky - and you've learned a couple of the biggie helps:thumbsup::thumbsup:
I'm sure that some folks are going to read your post - see lard and think eeeww. Have to say though - my grandma was an excellent baker - pies, biscuits, you name it - and she used lard a lot - it makes for extremely flaky crusts and biscuits.

I wasn't too sure about the lard when I saw it in a recipe earlier this year, but when I asked several 'matriarchs' in our church, every one insisted that lard is the only way to go for 'perfect' biscuits and pie crusts. It's worked out well for me!

I like green tea with nothing else in it. But I like the flavored green teas as well, such as mint and berry.
I also like Earl Grey with a scant tsp of sugar and perhaps a touch of half & half. (And we can thank Jean-Luc Picard for my experiments with Earl Grey!)
I like cinnamon w milk:thumbsup:
I'm not sure I've ever heard of cinnamon tea. Sounds good!

What's a 'regular cuppa tea'? Around here, a 'regular cuppa' would be Lipton, which is of course a blend of Orange Pekoe and Pekoe Cut Black. This is what we use to make iced tea...but sometimes I'll have a cup of it hot.

now granted - more important to me than to the men, but still interesting. Given the fact that bone loss is a health risk for me because of my myeloma I think I'll drink even more tea than I already do:thumbsup:

a regular cuppa tea around here would be PG tips :yum:
always hot tea , never cold. preferably in a china cup with the milk poured in last. :)
for every cup of coffee i take about 50 cups of tea .

Awww...man! You don't know what you're missing! A tall glass of iced tea (not regularly brewed tea with ice cubes floating around in it) on a hot day is one of life's truly great pleasures! My wife is from Georgia, and being from the American South, she can make some really great iced tea!

Yes, she does.
If she has iced tea at a restraunt, she usually has to settle for lemon in it, because as you know, once the tea is cold, there is no way you're going to get enough sugar to dissolve in it to really make 'sweet tea'.
There is always a pitcher of sweet tea in our refrigerator, just like there was always a pitcher in her mom's fridge.
