good afternoon friends,

what message board forum would be complete without a recipe thread? tonight for our supper i am cooking:

longhair's oven baked pork chops

serves four

needed:
8- 3/4 inch thick pork loin chops
one large bell pepper
one large red onion
1/4 cup extra virgin olive oil
1 tablespoon fresh basil
1/2 teaspoon fresh coarse ground black pepper
dash of salt
2 cans campbells tomato soup
2 cans campbells cream of mushroom soup or cream of celery soup
2 cups white wine


finely chop pepper and onion. mix basil, pepper and salt into olive oil, and lightly sauté pepper and onion in the mixture. remove onion and pepper from skillet and set aside. lightly brown pork chops in same skillet. add soup to onion and pepper mixture, and add wine. mix thoroughly. place pork chops in a cake pan. (large pyrex works best) add soup and veggie mixture to it. be sure to lift pork chops so mixture gets underneath.
bake in a 400 degree oven for 1 hour.

longhair's twice baked potatos

four large idaho white potatos
1/4 stick of butter. ( margarine will do, but doesn't taste as good)
1 cup freshly grated ramano cheese. (parmisian works, but see above)
1 tablespoon fresh oregano

fully bake the potatos ahead of time. the night before is best. while pork chops are baking, gently open skins and remove potato insides. in a mixing bowl, add potatos, and all other ingredients, and hand mash together. ( an electric mixer just liquefies it) stuff back into potato skins, and cover loosely with foil. 1/2 hour before pork chops are done, put potatos in the oven also.

when the pork chops are done, the potatos will be too. the sauce from the pork chops is delicious over the potatos. serve with hot rolls, and the vegetable of your choice.

I was invited over to a classmate's house for dinner and she served a great casserole, salad, and fruit.

I hate organic whole weat pasta (made on my own pasta maker) served in a "sauce" consisting of garlic infused olive oil and additional seasonings. I added kalimata olives, finely diced fresh organic tomatoes, and grilled portabella mushrooms. Topped with some vegan parmesan alternative. For appetizer I had a variation of a tradition greek salad made with avocados and tomatoes. As a side to the main course, I seared some squares of polenta. For dessert, I had a citrus salad. I didn't really stick to any one national quisine, but was more of a mediteranian meal--minus the lamb, beef, chicken, seafood, and cheese.

I'd post a recipee for my stuff, but I don't have one. I try to contrive recipees for my stuff when I can because I'm in the midst of writing a cookbook--but generally I never cook from a recipee. Real cooking is a lot like zen meditation, its in your heart and there's just a feel for how much of this or that to put into something.

Real cooking is a lot like zen meditation, its in your heart and there's just a feel for how much of this or that to put into something.


I freak out my mother with my curries which are all done by feel. And always come out better than hers made with just bland curry powder which, IMO is cheating.

We had roast dinner...roast potatoes, veg, sage and onion stuffing, yorkshire puddings, gravy, chicken (real chicken for hubby...veggie quorn stuff for me :D ). That was followed by ice cream sundaes :yum:

We had leftover spaghetti from the night before! It was delicious. I used organic pork and beef mince (hamburger meat to the Americans), onion, green and yellow pepper (bell peppers), mushrooms, olive oil, white wine, dried Italian herbs, fresh basil, a tin of chopped tomatoes, some tomatoe paste, and a jar of Bertolli Red Wine and Shallots spag. sauce! Plus wholewheat spaghetti noodles, and served with steamed carrots.

I did the roast meal yesterday lunch. Chicken, stuffed with this gorgeous lemon and mushroom stuffing recipe I've got, spuds, broccolli...

What I want to know is what on earth you were doing having yorkshire pudding with chicken. IS OUTRAGE! Yorkshire pudding is for beef, not chicken. :-p

We had home made pizza.

But last night we made chicken crepes - yummy. We were making a meal for friends who just had a baby.

We also had kids ice cream that we made for lunch yesterday because we had a few families and lots of kids around.

Kids ice cream = tub of ice cream. Sit it out while you chop up Mars Bars, Violet Crumble, Malteasers, Freddo Heads, Marshmallows, etc, and then add them and stir through the ice cream. Put it back in the freezer.
Hey presto - very nice dessert.

indeed it is, indeed it is. Of course I think the same thing about "garlic powder" or "garlic salt" or "garlic pepper" etc. Real Garlic actually tastes like garlic, and gives such a much nicer roundness of flavors to the dish.

Of course I'm the guy who makes marinara sauce by starting with raw tomatoes.

Milk, for some reason causes a blockage of the inner ear. Thus without milk I can hear perfect in my right ear (my left ear has some hearing loss anyway) and play good music. With milk my hearing reduces to the extent that I can't hear my own piano some days. :(

The lactose free stuff tastes better than the soy stuff.

So is it the lactose in the dairy that effects hearing. I have heard about dairy (read son with many ear infections), but not that it is specifically lactose.

You poor thing... so many nice dairy things... I would miss cheese the most I think.

I need a recipe for something quick and yummy tomorrow night. Busy day, friend coming for dinner, and have to be out the door by 7:15pm. Something with vegges would be good.

cook some pasta to the aldente stage. In a large, relatively shallow, ceramic bowl, place a wet dish cloth and microwave for 30 seconds to warm the bowl. Remove the clother from the bowl, and in the bottom of the bowl put roughly 4 tablespoons of garlic infused olive oil. Put hte pasta in the bowl and turn once. Add more oil, sundried tomatoes, kalimata olives (or black and green if you can't get fresh kalimata's). Add seasonings, I do garlic, kosher salt, freshground black pepper, and a couple chili peppers. Add more oil (the pasta and all yummy fixins should be coated in a thin layer of oil--turn pasta and fixins to insure an even coating). At this point you can either add sauteed mushrooms, chik'n, or chicken depending upon your tastes. For plating serve in a warmed bowl, garnish with fresh parsely, and put a little bit of Parmesan and Reggiano for you non vegan types on it (vegan parmesan alternative works well too).

Serve with a foccacia with a dipping sauce consisting of a variety of herbs and seasonings (garlic, kosher salt, and fresh ground black pepper being standard) 1 part balsamic vinegar to 2 parts EVOO (extra virgin olive oil--garlic or chili infused varieties work best here, for a special treat use one part of each). Add 1 tablespoon lemon juice (save the zest for another recipee or even a garnish) per 4 people served (one whole tablespoon for less than four people, two for 5-8 etc.). Wisk well, and you have the perfect dipping sauce.

As a side, I would do a variation on a greek salad. Three ripe avocados, pitted and peeled, cut into stripps about 1/4 inch thick. Do the same with one beefsteak tomatoe. Season with garlic, kosher salt, and fresh ground black pepper. Add feta squars for you non vegan types.

For dessert, a sorbet is always good in the summer time.

This is one of my favorite summer time meals. Its light, and healthy.

Thank you - not summer here, so we might skip on the sorbet.

Sounds great. I can get most of the ingredients. We are in a small town. Up until recently we could get two types of lettuce. The signs read "lettuce" and "fancy lettuce" - cracked me up every time. Now, we can get Cos as well!!! So some of the fresh ingredients are hard to come by. We were devestated the day we went to make our 7 hour lamb dish and couldn't get fresh garlic - the crushed stuff just isn't the same, but we had to make do.

It lists things by ingredient and tells you how to select them, store them, cook them, and then recipes. It is just amazing. So if I come across an ingredient I don't know what to do with, I can just look it up and she can tell me everything. It's just amazing.

It doesn't have 'fancy lettuce' in it though!

oops! I forgot you were south of the equator. If its nice and cool there, and there are kids afoot--some brownies might work really well. Right before they finish, sprinkle chocolate chips across the top just long enough to melt a little bit. After they come out, sprinkle with confectioners sugar.

I made Challupas tonight. Fried flour tortilla topped with refried beans, abit of salsa, chicken strips sauteed with onions and peppers, chilis, and topped with grated cheese. Melt in the oven for 10 +/- min. top with guacomole, sour cream, chopped tomatoes and shredded lettuce. My kids and thier friends devour them:). [for my son's lactose-intolerant friend I omit the cheese but top it with a bit of spaggetti sauce, it works for him]

I think I'm going to have to leave it til tomorrow night instead. We decided to cook something we could have in the oven ahead of time, since dh has a music lesson to teach just before hand. I forgot I also go and meet with someone to pray just before dinner tonight, so we need something in the oven ready to go. So beef curry it is tonight. But I am so making that pasta dish another night this week - it sounds soooo good.

fabulous. Its my own personal invention, born from the need for a late night snack on whcih I had pasta makins, but no tomatoes for marinara (or the full 24 hours to make marinara). Let me know how it works.

I just remembered to get back to you on this.

We tried your recipe.

It was lovely. We would probably go with less oil we thought, but besides that it was really nice. Oh - and our store had no chilli, so we had to use chilli flakes. Because we have some different tastes, we put some of the ingredients out on the table and added them to our own. We thought that might make an interesting variation actually. Put a plate of all sorts antipasto type ingredients and serve the pasta up done just with the basics.

We had some left over garlic oil, so we used it to glaze some pizza scrolls for dinner the next night. Yummy.
