Ok. This is yet another dumb question, but I was looking at the Orthodox Calendar and the last half of November is full of fast days.

Do Orthodox Christians (in the USA) not celebrate Thanksgiving?

Of course we do! Orthodox Christians never miss an oppurtunity to give thanks to God for all He has done.

How each family celebrates it (Turkey or sans Turkey) is between them and their Spiritual Father. :)

In most instances, Orthodox in the US have permission to abstain from fasting on the national day of Thanksgiving.

If only the US had more feast days!! We Orthodox sure do already appreciate them.

Generally, economy is granted to allow Americans to eat the traditional thanksgiving dinner. Though, I do know some American Orthodox families that perfer to have their thanksgiving dinner on the evening before the fast and have a fast friendly meal on Thanksgiving.
