We have no Deacon. Thus, an acolyte carries the Gospel Book, and the priest reads it. Tommorrow, I may not be able to find an acolyte to carry it. Is it better for the Lector to carry it, the priest to carry it, the Lay Eucharistic Minister/altar server carry it, or have it standing on the altar?

Keep it off the Lord's Table.
The best and purest liturgy is to represent clearly, that the altar is where the Lords Supper is celebrated. Nothing should go on the altar that isn't directly relevant to the consecration. I'm not 100% convinced that the candles should be on the altar (I like the floor-standing candlesticks that keep the altar clear).
You can have any of the Lector, the LEM, or the altar server to carry it. It isn't part of their proper role, but that just means that for the few minutes of the Gospel procession, they are acting as acolyte. Probably the Lector, since he is already serving in the Ministry of the Word, is the best choice for demonstrating how the service progresses from the Ministry of the Word, through the Ministry of Prayer, to the Ministry of the Sacraments. Having the LEM do it would muddle the structure of the liturgy.

LOL! Well, at my church maybe if you're in your fifties or sixties, you /might/ find them attractive... the one or two that aren't already married...
