My question is -- what are the main people/events in the Coptic/OO Church?

To highlight a few key people,
St. Mark the apostle introduced Christianity to Egypt
H.H. Pope Shenouda III is currently the 117th successor of St. Mark.
St. Athanasius, who was Pope of Alexandria from 327AD to 373AD, was the writer of the Nicene Creed, which is receited all over the world.
St. Anthony the Great was the world's first Monk.
