Is anyone here a Lay Eucharistic Visitor? (this person takes the Eucharist to thsoe who cannot get to church) What kind of training does this entail? Are there any specific requirements to be one?

No clue, although the priest is coming by to give the Body and Blood to my mother, who is currently recovering from a nasty operation to repair her vertibrae.

Most dioceses have training for lay readers/chalice bearers, the latter being required to be licensed. In the Diocese of North Carolina, a parish may have one layman licensed to administer the bread at a service as well, and a given number of parishioners who are LEMII's (Lay Eucharistic Ministers to the Ill and Infirm). They undergo additional training and are, I believe, specially licensed by the Bishop. Details not known; my wife is a licensed chalice bearer but has never had the additional training for the other jobs.
